Roy Mitchell joined the Portland Winter Hawks for one game in the 1986 Memorial Cup playoffs before taking on a full-time roster spot with the club the following year. He had three very successful seasons in Portland where he was known as one of the most rugged defensemen in the WHL.

Mitchell was selected in the ninth round, 188th overall by the Montreal Canadiens in the 1989 NHL Entry Draft. Upon finishing his junior career, he was assigned to the Sherbrooke Canadiens in 1989-90. He then played for the Fredericton Canadiens when the team relocated the next year. At the end of the season Mitchell was released by the Canadiens and he signed a free agent contract with the Minnesota North Stars on July 25, 1991. He spent the next two years in the minors with Kalamazoo before being called up by the North Stars for the only three NHL games of his career.

Mitchell continues to play pro hockey and spent two years in the British league with Newcastle and Nottingham before returning to North America. He also played the 1994 roller hockey season with the Edmonton Sled Dogs of the RHI.

Top Defenseman in British Elite League (1999) Signed as a free agent by Minnesota, July 25, 1991. Transferred to Dallas after Minnesota franchise relocated, June 9, 1993. Traded to New Jersey by Dallas with Reid Simpson for future considerations, March 21, 1994.
