Born in Spruce Grove, Alberta, Nathan Dempsey starred on the AJHL's St. Albert Saints before joining the WHL's Regina Pats in 1991-92. He was chosen 245th overall by the Maple Leafs in 1992 NHL Entry Draft and made the WHL East Second All-Star Team two years later after recording 50 points.

Dempsey's smart puck handling and willingness to play the body in his own zone made him an asset on the St. John's Maple Leafs. He was recalled by Toronto in 1996-97 and 1999-00 as an emergency fill in but was quickly returned to the minors when the regulars returned to the line up. In 2000-01 he scored 10 points in 25 games and was a plus-13 with the parent club, yet continued to hone his skills in the AHL.

Dempsey would play three games with the Maple Leafs in 2001-02 before becoming a free agent in 2002-03 and signing on with the Chicago Blackhawks. After parts of two seasons in the Windy City Dempsey was dealt to the Los Angeles Kings in the latter stages of the 2003-04 season.

Dempsey appeared in 53 games with the Kings before he signed as a free agent with the Boston Bruins on August 7, 2006. As a Bruin, the Spruce Grove, Alberta native split his only season between the Bruins and their AHL affiliate in Providence. Dempsey headed into the summer of 2007 as an unrestricted free agent and eventually opted to sign with Swiss Elite League's club in Bern
