Eric Gryba was born on April 14, 1988 in Saskatoon, Saskatchewan. Following a season with the Green Bay Gamblers of the USHL, Gryba was selected by the Ottawa Senators in the third round of the 2006 NHL Entry Draft.

Gryba would then attend Boston University where he played four seasons of NCAA Division I ice hockey with the Boston University Terriers, winning a NCAA title with the team and proving to be a stable and rugged rearguard.

Following his collegiate career, Gryba would make his professional debut in the American Hockey League for the Binghamton Senators in the late stages of the 2009-10 season. He would suit up for six games for the club, scoring his first professional goal.

Gryba would spend two full seasons in Binghamton before finally getting his first taste of NHL action. During the lockout-shortened 2012-13 season Gryba would appear in 33 games for Ottawa, providing an element of truculence from the back end. He recorded a pair of goals to go along with four assists and 26 penalty minutes.

After three seasons playing in Ottawa, the Senators would trade Gryba to the Edmonton Oilers for Travis Ewanyk and a fourth round draft pick on June 27, 2015. Gryba appeared in 53 games for the Oilers during the 2015-16 season. He found the back of the net once and added five assists. During the 2017-18 season, Gryba was waived by the Oilers and joined the club's AHL affiliate, the Bakersfield Condors, for the remainder of the season. As a free agent in the summer of 2018, Gryba signed a one-year deal with the New Jersey Devils.

Traded to Edmonton by Ottawa for Travis Ewanyk and Pittsburgh's 4th round pick (previously acquired, Ottawa selected Christian Wolanin) in 2015 NHL Draft, June 27, 2015. Missed majority of 2016-17 as a healthy reserve.
