Jon Gillies was born on January 22, 1994, in Concorde, New Hampshire. A product of the USHL, he was selected in the third round of the 2012 NHL Entry Draft by the Calgary Flames and would go on to attend Providence College.

Following his third collegiate season Gillies joined the Flames' AHL affiliate, the Stockton Heat, for seven games at the end of the 2015-16 season. He would spend the following year predominantly with the Heat, but would also make his NHL debut. On April 6 he made 27 saves in a 4-1 victory over the Calgary Flames.
