Zack Mitchell was born on January 7, 1993 in Orangeville, Ontario. He played junior hockey for the Guelph Storm of the OHL and undrafted, signed with the Minnesota Wild in 2014.

Mitchell made his professional debut for the Wild’s AHL affiliate in Iowa to start the 2014-15 season. In 76 games for the club he scored 17 times and added 18 assists. He would spend two full seasons in Iowa before receiving his first NHL recall. He made his Minnesota debut on November 10, 2016 in a 4-2 Wild victory over the Pittsburgh Penguins. Mitchell would go on to appear in 11 games for Minnesota over the course of the season.

The 2017-18 season would be split between Minnesota and Iowa. In 23 games at the NHL level, Mitchell recorded three goals and added a pair of assists. Mitchell's time in the Wild organization would come to an end in the summer of 2018. As an unrestricted free agent he inked a one-year deal with the Los Angeles Kings.
